Ingredients:
1 cooked chicken breast
2 medium-cooked carrots
2 tablespoons cream cheese or ricotta
2 tablespoons mayonnaise (optional for a creamier texture)
1 clove garlic (optional)
Salt and pepper to taste
A splash of olive oil or lemon juice for a special touch
Preparation:
Boil the chicken breast in salted and seasoned water (you can steam or boil it).
Boil or steam the carrots until very tender.
Combine shredded chicken, diced carrots, cream cheese, mayonnaise, garlic (if using), and a splash of oil or lemon juice in a food processor or high-powered blender.
Blend until smooth.
Season with salt and pepper to taste. Serve cold with toast, breadsticks, pita bread, or crackers.
