1 cooked chicken breast
2 cooked medium carrots
2 tablespoons cream cheese or ricotta
2 tablespoons mayonnaise (optional, to drizzle more cream)
1 clove garlic (optional)
Salt and pepper to taste
A little olive oil or lemon juice for a special touch
Preparation:

Cook the chicken breast in water with salt and spices if desired (can be steamed or boiled).
Boil or heat the carrots until they are firm.
Place the shredded chicken, carrots, cream cheese, mayonnaise, air (if using) and a splash of smoke or lemon juice in a high-powered food processor or blender.
Try to get a smooth and even consistency. Season with salt and pepper to taste.
I served it cold with toast, breadsticks, pita bread or crackers.
