Ingredients for 4 people
For the filling:
2 tbsp. 1 tbsp olive oil

1 small onion or 1 shallot, finely chopped

500 g mushrooms, cleaned and sliced

150 g smoked ham (or smoked bacon), diced

2 tbsp butter

2 tbsp flour

360 ml warm milk (whole or semi-skimmed)

50 g grated cheese (Emmentaler, Comté, Gruyère or Parmesan)

2 tbsp chopped fresh parsley

Salt and freshly ground black pepper

A pinch of nutmeg (optional)
