Amazing flourless pancakes! Ready in 10 minutes – a recipe that will be a hit in every kitchen!

Preparation of the dough:
In a bowl, beat 2 eggs, add 2 tablespoons sugar, a pinch of salt and a few drops of vanilla flavouring. Beat until everything is mixed.
Pour the kefir into the egg mixture and mix thoroughly until the sugar has dissolved.
Add 1 teaspoon bicarbonate and mix again until the dough is light and fluffy. Add the semolina and cottage cheese:
Add the semolina slowly, stirring constantly to avoid lumps.
If desired, add cottage cheese to make the pancakes even creamier and softer. Stir until smooth.

Prepare the apples:
Peel the apples, remove the cores and dice them into small cubes.
Melt a little butter in a separate pan over medium heat, add the apples and sprinkle with a pinch of sugar. Fry for 3-4 minutes, until the apples are soft and lightly caramelized.
Fry the pancakes:

 

Heat a pancake pan over medium heat and brush with butter.
Pour spoonfuls of the batter into the pan and form small pancakes. Place a spoonful of caramelized apples on each pancake and then cover with another layer of batter.
Fry the pancakes on both sides until golden brown, about 2-3 minutes per side. Make sure they are perfectly cooked, but still tender inside.

Serve the pancakes warm, preferably with your favorite toppings – honey, maple syrup or a pinch of powdered sugar. Perfect for any occasion!
